| The Chinese character "鲜" is made up of two strokes one on the left and one on the right. They symbolize two things in Chinese, fish and lamb, but when combined, it means fresh and becomes the delicious cuisine from the Qing Dynasty. The story goes like this. One day the chef was preparing a fish soup for his emperor when he discovered that he'd accidentally added the cooked lamb to his soup. The emperor wanted his meal and because there was no time to make a new soup, he served him the fish and lamb soup. The emperor tried it and exclaimed, "his soup is the best I've ever tasted" and from that moment on it was proclaimed the Emperor's favorite soup. |

| The zinc and iron contents are 2.5 times higher than that found in the common duck. Even though it has very high nourishment value, it is low in cholesterol content. During the Qing dynasty, the "Lian Cheng White Duck" was one of the imperial dishes. In 1999, the duck was affirmed by the Chinese Domestic Fowl Professional Associations as a medicinal duck. It is known to be able to be beneficial for cough, fever, insomnia, indigestion and inflammation. |
